Farfalle Success!

Wahlah! Now, I realize this dish doesn't have a whole lot of "real tough cooking" in it, but I'm learning that just a bit of boiling, chopping, and food processing is all it takes to create a fantastic meal. The lemon and orange zest add a marvelously refreshing touch to an overall light summer dish.

I guess the fact that my boyfriend inhaled three full bowls of this meal indicates it was a true success. However, some points to remember for next time:
  • 4 tsp garlic in the gremolata = I didn't quite know how many cloves of garlic to use. I'm guessing I threw 7 or 8 in my handy dandy Cuisinart food processor. Clearly, I used a clove too many. I would scale back next time.
  • Do not skip the tomatoes. Please. They're oh so good.
  • Toast the walnuts! It only takes a few minutes, and the nutty flavor is wildly enhanced.
